Japchae ( 잡채 ) (also Jabchae or Chapchae ) is a Korean noodle dish made with sweet potato noodles ( kor. 당면 , Hanja 唐 麵 , Dangmyeon ).
The noodles are cooked and various finely chopped fried vegetables (typically carrot strips , onions , spinach , and mushrooms ) are mixed in. Optionally, beef strips can also be added. It is seasoned with soy sauce , garlic, sesame oil and possibly sugar, garnished with sesame seeds and often slices of red chili .
The noodles for japchae are made from sweet potato starch and are mostly served as a side course, although it can also serve as a main course. Japchaebap ( 잡채밥 ) means that rice is served with japchae. Japchae can be eaten hot or cold.
