Yogurt drink

A yogurt drink in the traditional, oriental preparation is known as Dugh in Persia and Afghanistan , Laban in Jordan and Lebanon , Lassi in India and Ayran in Turkey .

The recipe can be varied:

1: 1 (or 2: 1) yogurt and water, a little salt; sweet with sugar and saffron , fruit juice or pureed fruits (e.g. as a mango lassi), spiced and salty as a namkeen lassi . Because of the higher fat content , Greek or Turkish yoghurt is particularly suitable , as the fat is the main aromatic carrier . Sometimes some of the yoghurt is also replaced with sour cream to increase the fat content. Yoghurt drinks are also a means of "cooling" when consuming spicy dishes.

Modern yoghurt drinks can be found in many varieties in the grocery trade, often touted as functional food , as food with positive health effects, the extent of which, however, is mostly controversial. However, scientists from the Braunschweig Helmholtz Center for Infection Research pointed to cultures of the bacterial strain Escherichia coli Nissle ( E. coli Nissle ) e.g. B. at least the alleviation of intestinal ailments in animal experiments .
