Joseph "Josy" Stoffel (born June 27, 1928 in Differdange , Luxembourg ) is a former Luxembourg gymnast . The 16-time Luxembourg all- around champion took part in five Olympic Games (1948, 1952, 1956, 1960 and 1964), four world and six European championships, but was only able to win one international medal, bronze in the jump at the 1955 European championships . With five Olympic participations, Stoffel is the record holder for Luxembourg.

In 1957 and 1960 he was elected Luxembourg Sportsman of the Year , three more times he came second in the election. In 1957 he was also the Luxembourg runner-up in the pole vault.

During and after his active gymnastics, Stoffel was a coach, 1955–65 for the Belgian national team, 1965–74 as Luxembourg national coach.

His wife Yvonne Stoffel-Wagener (1931–2014) was also successful in gymnastics; she took part in the 1960 Olympic Games.
