Kaminwurz

Kaminwurz from South Tyrol

The Kaminwurz or Kaminwurze is one of South Tyrol native, cold smoked and air-dried raw sausage of beef and back fat from pork or pork only. Occasionally you can also find chimney sausages made from lamb , goat or deer meat .

The name comes from the original way of smoking. In many houses there was a smokehouse in the chimney on the roof , in which the residents left their smoked food to mature as a reserve.
