Kritharaki
Kritharaki ( Greek κριθαράκι , Turkish arpa şehriye ) are small noodles in the form of grain or rice, which are often used in Greek cuisine .
They are also known under the names Orzo or Manestra, in Italian cuisine under the pasta names Risoni or Risi . In German-speaking countries, they are often simply referred to as Greek noodles or noodle rice .
The often heard name of this Greek noodle specialty as " rice noodles " is misleading. They are not made from rice , but from durum wheat semolina and water.

As a dish, kritharaki are usually mixed with a little tomato sauce as a side dish, sometimes mixed with real rice. Risotto-like dishes from Kritharaki are known as Kritharoto, a case word made up of Kritharaki and risotto. Kritharaki is also used as a soup .

The word Kritharaki is derived from the Greek terms for wheat , barley or grain. In particular, κριθαράκι (kritharaki) is the diminutive of κριθάρι (krithari) = barley
