Lactobacillus paracasei is an immobile, probiotic rod bacterium with a size of 0.8 to 1 by 2 to 4 µm. It belongs to the group of gram-positive bacteria and does not form spores. L. paracasei occurs individually or in chains and grows in a temperature range between 10 ° C and 40 ° C. The bacterium lives facultatively heterofermentative and produces L - (+) - lactic acid . L. paracasei occurs naturally in the human intestine , but also in fermented vegetables , milk and meat . However, it is also increasingly used in foods such as yogurts and other dairy products.

Medical importance

L. paracasei has been shown to have an inhibitory effect on the activity of the bacterium Escherichia coli . For this reason, it has already been used in medicine as a remedy for diarrhea . In 2011, L. paracasei was also used against tooth decay for the first time . This is because it is able to recognize the bacterium Streptococcus mutans , to attach to it and thereby lead to clumping. S. mutans can then no longer attach to the tooth and is washed away with the saliva or removed when you brush your teeth.
