Lily buds , also known as lotus nuts , are the seeds of the lotus plant, more precisely of the Indian lotus ( Nelumbo nucifera ). They are mainly used in Asian , especially Chinese, cuisine for the preparation of desserts . They have been marketed in Europe for decades, even if they are largely unknown.

In Europe, mostly dried white lily buds are traded. The nutty fruit has a diameter of approx. 0.5 to 1 cm and is very hard. To prepare it, first put it in hot water and let it soak for a few hours. Then remove the bitter green seedling that is located between the two cotyledons. The almond- like lotus nut can then be further processed as required.
