Lentils with spaetzle is a traditional Swabian dish .

In addition to the lentils , the ingredients usually include soup greens and bay leaves . The roux contains a little fat and wheat flour, roasted onion cubes and cubes of mixed bacon and is deglazed with meat broth or vegetable broth and often with a little vinegar . According to the bestseller of the traditional Swabian culinary art of cooking and baking according to basic recipes by Luise Haarer , the lentils are first soaked in water overnight. The further preparation is described as follows:

"A brown roux, in which the onion has been steamed until translucent, is extinguished with lentil stock, lentils, spices and vinegar are added and everything is left to cook for a short time. The vegetables are not crossed out. You can heat string sausages or garlic sausages in them 1/4 hour before serving. An excellent side dish is soft-boiled, fatty smoked meat, which, however, is cooked separately. "
