Lobio ( Georgian ლობიო) is a traditional bean dish in Georgian cuisine that is served as a side dish or on its own as a fasting dish.

To prepare it, red beans are first soaked in water. Then they are boiled in salted water, which is changed at least twice. When the beans are done, they are lightly mashed and seasoned with roasted onions , coriander and parsley greens , hot paprika (chili peppers), salt , pepper and garlic . The standard dish includes walnuts . In addition, sulguni cheese, leek and cherry plum sauce (Georgian Tkemali ) are added.

Lobio is served in terracotta vessels with lids. In the past, the dish was braised in a fire in such vessels.

There are variants of Lobio that are prepared from other types of beans and seasoned differently. Mild forms are made with white beans and dill or fresh green beans and egg .
