Luigi Carnacina

Luigi Carnacina (born September 2, 1888 in Rome , † October 28, 1981 ibid) was an Italian cook and author of numerous standard works on Italian cuisine .

At the age of twelve, Carnacina was already working as a waiter and kitchen boy in an inn. At fourteen he left Italy for Monte Carlo , where he met Auguste Escoffier at the Hotel Circo's , whom he followed to the Hotel Savoy in London . In 1920 Escoffier appointed him head of his restaurant "de l'Océan" in Ostend . Subsequently, he was Maître d'hôtel and from 1933 director in various hotels in Europe and overseas.

Carnacina has been an active author since 1957 and has published cookbooks such as A la carte , La Grande Cucina , Il Carnacina and Il gourmet internazionale , which today are generally regarded as standard works of Italian and international cuisine.
