The almond fish is a pastry made from light shortcrust pastry in the shape of a fish. It contains a sweet filling made from nuts and sugar and is available in various sizes. The smallest almond fish weighs 50 grams. The dough consists of flour, sugar, butter, milk, egg and, depending on the recipe, raising salt or baking powder . The filling is made from sugar, ground almonds or tree nuts or hazelnuts , lemon juice, lemon zest , cinnamon , egg and milk.

The oldest written mention of an almond fish from Eastern Switzerland can be found in the Swiss Idioticon from 1881, where it is described as a wedding pastry in St. Gallen . However, fish-shaped pastries are not uncommon. In Schwyz , Zug and Zofingen , the almond fish was known as a Christmas biscuit at the same time. It is unclear how it came to eastern Switzerland and how it became known today.
