Max Kehl

Max Kehl (* 1940 ; † 2002 in Zurich ) was a Swiss chef .

Max Kehl completed his cooking apprenticeship at the Zurich Hotel Baur au Lac . After stints in France and his first own operations, he opened “Chez Max” on Seestrasse in Zollikon in 1978, supported by his partner Claes Sivertzen . Kehl relied on market-fresh products and introduced nouvelle cuisine in Switzerland . Together with Frédy Girardet in Crissier and Hans Stucki in Basel, Max Kehl was one of the radical innovators in Swiss gastronomy in the eighties.

In 1991 he renamed his restaurant Chez Max - Les vacances and focused on simpler and cheaper dishes. In 1992 the inventory was auctioned off and Chez Max closed. From then on, Kehl worked as a consultant and director of a luxury hotel in Barbados.

Restaurateurs like the chef Beat Bolliger and the TV chef Erik Haemmerli went through Kehl's school .
