Monellin is a natural sweetener , a protein found in the pulp of the moon seed family Dioscoreophyllum cumminsii . It consists of 2 peptide chains with 45 and 50 amino acids , which are not covalently linked and only taste sweet together; characterized the sweet taste is not thermostable . Monellin is about 1,500 to 2,500 times as sweet as sucrose ( table sugar ).
