Mortlach is the oldest legal whiskey distillery in Dufftown , Banffshire , Scotland . Some of the distillery buildings are classified in category B in the Scottish list of monuments.
history
The distillery was founded in 1823 by James Findlater, Donald Mackintosh and Alexander Gordon. The name Mortlach is interpreted differently, in addition to the translations "large green hill" or "bowl-shaped valley" it is sometimes translated as "massacre of the wild geese", whereby "wild geese" means the Danish army, which was founded by the Scottish King Malcolm II. was defeated in the Dufftown area in 1010.
Originally the distillery was called Dufftown Distillery and belonged for a time to John and James Grant of Glen Grant , then later to George Cowie, before being operated by Distillers Company Ltd. (DCL) and United Distillers (UD) eventually came to Diageo , which they still own today.
The distillery's most famous apprentice was, by the way, William Grant, who later became the founder of Glenfiddich .
production
The water from the Speyside distillery comes from springs in the Conval Hills. The distillery has a mash tun (12 t) made of stainless steel , six fermentation vats (59,000 l each) made of larch wood , three wash stills (together 32,500 l) and three spirit stills (together 26,000 l).
Unusually for Scottish whiskeys, part of the whiskey at Mortlach is distilled in a triple distillation process , as is otherwise known from Ireland . Here is The Wee Witchie called spirit still No. 1, which is also the smallest pot still is the distillery, as intermediate nursing used, but only the will lag ( feints ) from the first two wash stills in their distilled not from wash still No. 3, the largest pot still.
