Mushawa

Mushawa (also Mashawa ) is a stew of Afghan cuisine . Central ingredients are different types of beans, beef and dill .

Mashawa shares ease of preparation, long cooking times and flexibility in the choice of ingredients with many other stews. The base is usually beef cubes fried in sweaty onions and garlic, to which chickpeas , kidney beans and mung beans are added. Other traditional ingredients are dill, coriander and tomatoes. A long cooking time of several hours is used to make the beef tender and the beans cooked. Small dumplings made from minced beef or lamb are often used instead of the beef cubes. Mushawa is usually eaten quite spicy in Afghanistan; The sharpening agent is chilli.

Some common variations of the dish change its character. Quite a few authors recommend preparation with minced meat, but without dill, which significantly shortens the cooking time and makes the result similar to chili con carne . Lentils or barley as a substitute for one of the beans are also not uncommon.

Before serving, a dollop of yoghurt (usually Laban in Afghanistan ) is placed on top of the dish. By omitting the meat, the dish can be prepared as a vegetarian version, or by omitting or replacing the yoghurt as a vegan version. Mushawa is usually served as a side dish or appetizer. However, it can also serve as a main course, especially the meat-based variant. As with many stews, bread is the most common accompaniment to mushawa; in Afghanistan this is mostly the ubiquitous naan or lavash, which was not originally from Afghanistan .
