Nut milk is a herbal drink made from nuts . Their possible uses in human nutrition can be compared with that of milk , which is why nut milk is considered a milk substitute . Nut milk is a liquid extract made from whole nuts. For production, nuts are soaked in water for a few hours and then finely pureed with fresh water . Finally, the solid components are filtered out, depending on the variety, table salt , sweeteners ( e.g. agave syrup ) or aromas are added. The filter residues, similar to the marc when pressing fruit , are also suitable for consumption and can be used elsewhere, for example in muesli . Since the production process usually does not require heating, nut milk is also suitable for a raw food diet. Common nuts for processing into nut milk are hazelnuts and walnuts .

Since the term milk is protected in some countries, commercial products are also referred to as nut drinks as an alternative.

Nut milk is used by vegans , ovo vegetarians and people with lactose intolerance or milk protein allergy . Since nut milk is parve (neither milk nor meat), it can also be relevant in the context of Jewish dietary laws .
