Almond milk is a herbal drink made from almonds (the seeds from the almond tree) and water . Milk substitutes may not be marketed under the name milk in the EU . The regulation expressly states: The term “milk” is reserved exclusively for the product of normal udder secretion obtained by milking one or more times, without any addition or withdrawal. For this reason, products are sold in stores as "almond drinks" or "almond drinks" or the like. Almond milk is also used in various care products .

history

Almond milk was already known in the Middle Ages . It spread from the Iberian Peninsula in Europe to East Asia . In both Islamic and Christian society, it was popular because of its purely vegetable composition (mainly made from almonds, various fruits and seeds) and was used as a fast food . Almond milk is a common ingredient in medieval recipes, even if its production is usually not described in detail.

Almond milk was recommended in the Naples area in 1828 as a supportive treatment for dysentery : “The stranger likes to experience attacks of dysentery, warning against the use of heating agents, and for the simple enjoyment of strong almond milk mixed with snow, or sorbetti , Orgiates and the like of cooling drinks, if a doctor who is familiar with the climate cannot be consulted immediately. "

Manufacturing

To make almond milk, pour warm to hot water over freshly ground and then roasted almonds or an almond paste ( pasta di mandorla in Sicily ) and let it steep for several hours. The filtered almond milk can be sweetened or refined with spices (e.g. vanilla , cinnamon , orange blossom water ) depending on your taste .

Almond milk is a typical drink in Sicily , where it is available as a latte di mandorla , as well as in Calabria , Apulia and in Spanish cuisine. In Mallorcan cuisine, almond milk is processed into almond sorbet, which is traditionally served with almond cake.

In the USA you can get almond milk in supermarkets along with numerous other milk substitutes and milk varieties, such as B. lactose-free milk. From 2013 almond milk became a trendy drink in the USA and sales rose sharply. Since then, the drink has also been increasingly distributed in Europe. According to current calculations, a global market volume of 25 billion US dollars is expected to arise by 2025, as “the increasing number of health-conscious consumers combined with a growing inclination to herbal products will drive the market in the forecast period. Increasing cases of lactose intolerance and hypercholesterolemia should also fuel market demand in the coming years ”.
