Patrick Spies

Patrick Spies (* 1979 in Eiterfeld ) is a German chef .

Career

After his apprenticeship in Fulda from 1996 to 1999 , he went to Reto Mathis food affairs in St. Moritz in 2000 . From 2001 to 2004 he cooked for Jörg Müller on Sylt and then at Gut Lärchenhof in Pulheim . In 2005 he moved to Villa Hammerschmiede in Pfinztal as Sous Chef alongside Thomas Balensiefer .

In 2008 he became head chef there and was awarded a Michelin star in 2009.

At the beginning of 2011 he took over the kitchen management at the restaurant L'étable in Bad Hersfeld . The restaurant has been awarded one star in the Michelin Guide and 17 points in Gault Millau since 2012 . He left L'étable at the end of 2018 and has been working in Zurich since then.

At the end of 2019 it was announced that he wanted to develop a gastronomy project in Fulda, the opening of which is announced for spring 2021.
