Perilipin is the protein comprising the surface of the lipid droplets in fat cells of mammals coated and before the fat-burning enzyme HSL ( hormone-sensitive lipase ) protects. Perilipin is therefore important for the building up and the controlled breakdown of fat reserves in the body. Mutations in PLIN - gene are a rare hereditary lipodystrophy responsible syndrome.

Perilipin is considered to be a possible starting point for the treatment of obesity . Without the protective protein shell, fat cells are immediately metabolized enzymatically, ie they are broken down with the help of enzymes and fed into the metabolism, as scientists at the Baylor College of Medicine in Houston found out in experiments with laboratory mice.
