Cacciatore also Pollo alla Cacciatora (chicken cacciatore) is a poultry recipe of the Italian cuisine , which varies regionally. Chicken or poulard are used (both the whole animal and just the breast or legs).

What all variants have in common is that after searing the meat for a while, it is braised with garlic, herbs, tomato sauce and wine for a long time . Mostly red wine is used, in Apulia and Campania also white wine. Depending on the region and the season, forest mushrooms, boletus , onions, olives, capers or potatoes round off the dish. Bread or polenta serve as a side dish .

An almost identical dish is known in Veneto and around Lake Garda under the name "pollastro in squaquaciò".

In the American variant "Chicken Cacciatore", chicken breast fillet is mostly used and served with spaghetti and Parmesan cheese . A modern advancement is the "Chicken Cacciatore Sandwich ".
