Pollo al chilindrón ( Spanish for “braised chicken”) is a Spanish stew that originated in the ancient kingdoms of Aragon and Navarre . It consists of chicken , ham (e.g. Serrano ham ), tomatoes , sweet peppers , onions , and other vegetables .

For preparation, the chicken, cut into several pieces and, according to some recipes, also skinned, is first fried with onions and paprika. Then tomatoes and ham are added and everything is braised on the stove or in the oven. It is also common to add garlic and wine . There are different versions of this dish with different vegetable ingredients in the northern Spanish regions. What they all have in common is the use of chicken, peppers and tomatoes. Typical side dishes are bread , french fries or rice .

Similar dishes al chilindrón ( Spanish for “ stew ”) are also prepared with lamb , rabbit , kid or veal .
