Rice meat (also meat rice ) is a specialty from the Balkans. In Hungary the dish or its regional variant is known as Rizseshús , in Serbia as Đuveč .

Main ingredients are rice , especially long grain rice, and pork from the shoulder ; in addition there are onion , garlic , tomato paste , salt , pepper , caraway seeds and paprika powder (also spicy). Instead of pork, veal is also often used.

The meat is cut into bite-sized pieces, fried in oil or lard until golden brown, onions and garlic are added and roasted for a while. Then the remaining spices are added, water or broth is poured over them and cooked on a low flame for about 20 to 25 minutes before the rice is added and the whole thing has to simmer for another 15-20 minutes until the rice absorbs the liquid completely Has. The rice meat is served with grated cheese (formerly Emmentaler , nowadays often Parmesan ).

In Hungary they also like to use fresh red peppers and season the dish with cherry peppers or Erős Pista .
