Ropa vieja ( German "old clothes") is one of the national dishes of Cuba , but is also eaten in other Latin American and Caribbean countries such as Panama and Puerto Rico , in the US state of Florida or on the Canary Islands .

It mainly consists of braised beef and is eaten with various vegetables . The origin of Ropa vieja is a Sephardic dish from the Middle Ages , which is believed to have originated on the Iberian Peninsula over 500 years ago . Since cooking is not allowed on the Sabbath , Sephardi cook the meat the night before and let it cook slowly . Through the Spaniards and their former colonial empire , the dish also found its way into American cuisine .

The name Ropa vieja goes back to a legend. Once, a poor old man is said to have cut up and cooked his own clothes because he could not afford food for himself and his family. Then he prayed over the simmering brew, whereupon a miracle happened and his cooked clothes turned into a delicious meat stew.
