Sambunigrin is a cyanogenic glycoside . The stereoisomer configured on the nitrile D is called prunasin , the racemate with this compound is called prulaurasin .
Occurrence
The glycoside occurs in the leaves, the unripe berries and the seeds of the ripe berries of the black elder , from whose Latin name Sambucus nigra the name of the sambunigrin is derived. But sambunigrin has also been found in apple seeds.
Chemical properties
In the presence of water, the cyanogenic glycoside splits off hydrogen cyanide . When heated, sambunigrin breaks down and thus loses its toxic effect.
The rotation value is −76.3 ° (λ = 598 nm, in ethyl acetate ).
