Samin Nosrat

Samin Nosrat (born November 7, 1979 in San Diego , California ) is an American cook and food critic. She regularly writes gastronomy columns for The New York Times Magazine and has her own miniseries on Netflix, Salt, Fat, Acid, Heat .

Life

Nosrat's parents immigrated to the United States from Iran in 1976 . She grew up with Persian cuisine , but did not learn to cook until she was an adult.

In 1997 she began studying at UC-Berkeley with a major in English. In her sophomore year, she ate at Chez Panisse's for the first time and decided to apply for a job there. Nosrat rose in the hierarchy to the restaurant kitchen and eventually cooked under Alice Waters . After leaving Chez Panisse , she cooked in other restaurants in Berkeley and also in Italy. Nosrat later worked with Michael Pollan , with whom she learned to write. She appears both in his book Cooking. A natural history of transformation on and in the Netflix special Cooked based on it .

Nosrat's 2017 cookbook Salt, Fat, Acid, Heat was named "Food Book of the Year" by The Times London and was a New York Times bestseller. The cookbook won the James Beard Award in 2018.
