A Skåne apple pie

Schonischer apple pie ( Swedish skånsk äppelkaka ) is a traditional and heavy dessert Skåne origin. It is traditionally served on St. Martin's Day on November 11th. Schonischer apple pie is a kind of crumb tart that comes in several versions: with grated, sliced or quartered apples , with applesauce or with a mixture of both.

preparation

A layer of breadcrumbs is sprinkled on top of an apple layer, with butter and sugar on top. Vanilla sauce or cream is served with the apple pie baked in this way .

Traditional Skåne apple cakes are baked with crumbled black bread such as kavring . In the common, modern version, crumbled white bread or breadcrumbs are used.

The Danish apple pie ( Danish æblekage ) is similar to the Skåne , but is not baked and served cold with whipped cream on top.

history

The type of preparation is already recorded in writing in a book by Cajsa Warg , the original Swedish of which was published in 1755 and which was published in German in Greifswald in 1772 under the title of Swedish Cooking and Household Book . However, the language there is not about Scena, but about "grated apple cake".

There it says:

“Peel apples and then rub them on the grater, and mix them with sugar as you like; then rub some fine rock bread on it, smear a mold with butter and first sprinkle fingers thickly with the bread on the bottom, pour over a little clarified butter with a spoon and then put a layer of apples; and so continue until the cake is as high as you want it to be, but the last one must be bread and butter on top; also pour some wine over it, and take care that the cake does not get too dry or too wet; afterwards let him bake it in the oven. "

In a pamphlet on skånska äppelkaka of the Skåne Gastronomic Academy, the archaeologist Marie Jonasson Schmidt points out that several historical Swedish cookbooks contain similar recipes, but none of them have the name “Skåne” apple pie.

In a column in Ystads Allehanda, the Skåne apple pie was described as "just a variant of all other apple pie in the country".
