Pig tail

The pork tail consists essentially of bone , connective tissue and rind , only a small part of muscle meat . In the kitchen, it is mainly boiled to make broth for pork dishes or to add flavor to stews .

Salted pork tail belongs to the pork knuckle (Solberfleisch), a simple, cooked dish made from pork foot , parts of the pork head such as ears and trunk and knuckle of pork .
