Shropshire Blue is an English blue cheese . Despite its name, it initially had nothing to do with Shropshire until 2007.

history

The cheese was developed in Inverness , Scotland by Andy Williamson in the 1970s . He had previously learned the production of Stilton . The cheese was originally called Inverness-shire Blue or Blue Stuart , the current name Shropshire Blue was chosen solely to promote sales. However, the production of the cheese was discontinued in 1980. After that the cheesemakers Elliot Hulme and Harry Hanlin took over the production, which did not last long either. Cheesemaking then went to two other dairies , Long Clawson Dairy in Leicestershire and Colston Bassett Dairy in Nottinghamshire , which still make the cheese to this day. In addition, there was the Cropwell Bishop Creamery , which intended to establish the cheese on the German market in cooperation with other English cheese manufacturers in the 1990s. Cropwell Bishop's Shropshire Blue won the Best English Cheese title at the British Cheese Awards in 2006 . In fact, Shropshire Cheese Company has only made the cheese in Shropshire since 2007.

Manufacturing

The cheese is made from cow's milk like Stilton, also the mushroom culture used, Penicillium roqueforti , is the one that is used for Stilton production. The only difference is that annatto is added to the curd , which gives the cheese its typical orange color. The cheese has a maturation period of basically 12 weeks, but it can ripen for the same period. The finished cheese wheels each weigh 8 kilograms and have a cylindrical shape with a diameter of 20 cm and a height of 30 cm. The fat content is 48%.

taste

The mouth feel of the cheese is described as creamier than Stilton and a bit brittle. The taste is sharper than a Stilton, it is rated as wine-like-sour with notes of oranges and lemons with a sweet aftertaste. Dark ale , strong red wines and port wine are recommended as accompanying drinks, the cheese is also suitable for cooking or for consumption with fruit.
