Splitterbrötchen are a slightly sweet, high-fat bread specialty from Berlin . They have a crispy, "splintery" crust and a soft crumb. Sliver rolls are irregularly shaped with a jagged surface, they are similar to the Hamburger Franzbrötchen . While the latter are made from rolled Danish pastry , the butter is only added to the sliver roll after the actual dough has been prepared.

The dough is made from wheat flour , yeast , sourdough (or lemon concentrate), salt, sugar and butter. The semi-frozen butter is added at the end and must still be recognizable in pieces after kneading.

While the preparation of Danish pastry prevailed in the west of the formerly divided Berlin , the original method was retained in the east of the city . In the 2010s there are only a few bakeries in east Berlin that produce sliver rolls in this traditional way.
