A tortilla [ tɔrˈtiʎa ] is a Spanish omelette made from eggs with potatoes and onions . To distinguish it from the tortilla francesa , which does not contain potatoes, it is called tortilla española or tortilla de patatas (potato tortilla). It should not be confused with the Mexican flatbread of the same name .

Due to the nationwide distribution of this dish and its ease of preparation, it can be regarded as a Spanish national dish alongside paella and gazpacho . While the paella is mainly popular because it is expected by tourists as a national dish (but is actually a Valencian dish), the tortilla is known by locals all over Spain and is also available packaged in supermarkets.

The tortilla can be varied by adding various ingredients such as vegetables , fish or sausage . The original recipe for tortilla de patatas only uses potatoes, eggs, olive oil and salt. The Madrid variant popular today also contains onions and sometimes garlic . In Catalonia , the tortilla is always given plenty of garlic.

The exact origin of the tortilla is not known. It is already in the early 17th century in the notebooks documented by Francisco Martínez Montino and was first called Tortilla de cartuja . This variation, invented by Carthusian monks , was prepared with cream . Another variation from the Montiño recipe collection is the tortilla de agua . A few drops of water are put into the pan after the olive oil has been poured off and before the eggs are stirred in. This type of preparation is considered to be the origin of the tortilla (tortilla francesa), which is now known as French in Spain .

Legend has it that the tortilla de patatas was invented by a peasant woman in Navarre in the 19th century during the Carlist Wars . General Zumalacárregui was housed on the farm and the farmer's wife had to prepare a meal for the military, but had no other food besides potatoes, eggs and onions. In this emergency, she prepared the general's first tortilla de patatas .

The tortilla de patatas is described for the first time in 1817 in connection with the province of Navarre in an anonymous letter to the Spanish parliament, in which the poor living conditions of the Navarre farmers are reported.
