Seasoning oil

Spice oils are vegetable oils that have been flavored by adding spices and herbs . Volatile aromas pass into the oil through maceration , are bound and thus preserved.

Spice oils of various compositions are a traditional component of many country kitchens. In southern Europe they are mostly made with olive oil and contain herbs such as rosemary , sage , thyme or bay leaf , in Asia, especially in China, soybean oil flavored with chilli is common.

Manufacturing

For the production of seasoning oil, mostly fresh herbs, chili peppers or garlic, individually or in combination, are completely covered with vegetable oil and sealed airtight. Then the oil has to steep for several weeks in a cool and dark place and is finally transferred through a sieve into a bottle for use. The vessels used must be thoroughly cleaned and completely dry. Depending on the type of oil, seasoning oil can keep for several years.

The production of aromatic oils can lead to undesired fermentation and thus the formation of dangerous bacterial toxins ( botulism ), especially when using garlic or herbs whose surface was not completely dry after cleaning. If bubbles rise from the spices or if the container is under pressure the first time it is opened, the seasoning oil is spoiled and should not be used.
