Spicy vinegar

Spicy vinegar is vinegar that has been flavored by adding herbs , spices or fruits . Aromas pass into the vinegar through maceration , are bound and thus preserved.

For the production of aromatic vinegar , mostly fresh herbs, spices and garlic, individually or in combination, are completely covered with vinegar (wine or fruit vinegar) and sealed airtight. The vinegar then has to steep for several weeks in a cool and dark place and is finally filtered and bottled for use.

Common ingredients for spicy vinegar, which is mainly used for salads , are z. B. basil , Bibernelle , savory , borage , tarragon , chervil , bay leaf , mint , thyme or lemon balm , cloves and peppercorns .

Spicy vinegar with dry spices such as chilli , cloves, coriander seeds , pepper, allspice or cinnamon is often boiled for a few minutes, then filtered and pulled into bottles. Manufactured in this way, it can be used immediately, e.g. B. for pickling vegetables . Storage improves its aroma.

Blossoms like those of the elder or fruits like raspberries and blackberries are used to flavor vinegar.

If the vinegar and sugar content is low, spicy vinegar can form mold on the surface.
