The Graf von Schönborn winery is located in Hallburg Castle in the south of the Volkacher Mainschleife in the Franconian wine-growing region . It cultivates 28 hectares of vineyards and produces around 170,000 bottles per year. The winery is managed by the owner Paul Graf von Schönborn, who also owns a winery in the Rheingau .

The estate has made a name for itself especially with white wines from the Riesling and Silvaner grape varieties , the top quality of which thrives on the warm, clayey Keuper and shell limestone soils of the Hallburger Schlossberg and Gaibacher Schlosspark sites .

The Gault Millau wine guide awarded him three out of five grapes in 2010. Gerhard Eichelmann's tasting team rated the estate in 2010 with three out of five stars.

The Graf von Schönborn winery belongs to an extensive possession of the Counts of Schönborn , whose vineyard ownership in Winkel in the Rheingau has been documented since 1349.

Since 1998, Paul Graf von Schönborn has been managing the property, which includes the Graf von Schönborn winery, the Schloss Schönborn domain winery in Hattenheim in the Rheingau and Casa Cadaval in Muge in Portugal . Georg Hünnerkopf has been estate manager since 1986 and was named “Estate Manager of the Year” by Gault Millau in 2008; Casa Cadaval is run by Teresa Countess von Schönborn. Like the domain winery Schloss Schönborn in the Rheingau, the Graf von Schönborn winery in Franconia belongs to the Association of German Prädikatsweingüter.

On October 19, 2012, wine inspectors and police searched the winery in Hattenheim, Hesse. After the owner is determined because of violations of the German Wine Law against the estate manager. In August 2013, the winery removed 22 wines from its range due to the ongoing investigations. Franconian wines are also said to be affected by the inadmissible oenological practices. The company's membership in the Association of German Predicate and Quality Wineries (VDP) is currently suspended (as of August 2013) at the request of the owner.
