The winery has vineyards in locations in the Rheingau between Hochheim and Lorchhausen . The property is divided into 38 individual layers, of which over 80% are classified for the production of first growths . history

In 1640, Philipp Erwein von Schönborn acquired today's estate in Hattenheim from the cameramen in Worms .

The Schönborn were among the first to fill mouth-blown bottles from 1720 onwards . A 1735 Johannisberger from the treasure cellar is one of the earliest bottle fillings in Germany. The winery is a founding member of the Association of German Predicate and Quality Wineries (VDP), registered in 1897 . Various products have received national and international awards.

In the 18th century, today's main building and a press hall of the winery were built. In 1896 Franz Maximilian von Schönborn was able to acquire the so-called Rheinhaus, a former winery. In 1900 a house was built next to the main house.

Since 1998, Paul Graf von Schönborn has managed the property, which includes the Schloss Schönborn estate, Schloss Hallburg near Volkach in Lower Franconia and Casa Cadaval in Muge in Portugal .

On October 19, 2012, wine control and police searched the winery. According to the owner, the estate manager is being investigated for violations of the German Wine Law . According to insider reports, vineyards are said to have been poorly maintained and an unauthorized concentration process ( cryo-extraction ) is said to have been used. In August 2013, the winery removed 22 wines from its range due to the ongoing investigations. The company's membership in the Association of German Predicate and Quality Wineries (VDP) was initially suspended at the request of the owner and was later returned in the course of the reorganization of the winery.

The wine inspection made the following findings on affected wines:

As was learned at the beginning of May 2014, the public prosecutor's office is not only investigating the former estate manager, but also the owner. One of the resulting proceedings for breach of duty of supervision was discontinued against payment of a fine of € 35,000.
