The Salwey winery in Oberrotweil in the Kaiserstuhl is a winery and distillery in the German wine-growing region of Baden . The company has been family-owned since 1740, and the wines have been made there under the name Salwey for three generations.

Mainly white grape varieties are grown on around 50 hectares of vineyards. The classic Kaiserstuhl grape varieties gray, white and pinot noir are grown there . With a share of 40% of the total vineyard varieties are Pinot Gris and Pinot Noir are the dominant varieties , besides having Pinot Blanc with 16% still a significant proportion. The remaining 4% are made up of Chardonnay and Sauvignon Blanc .

Locations

The vineyards in the Oberrotweiler Kirchberg, Eichberg and Henkenberg and Glottertaler Eichberg locations are self-cultivated. Kirchberg and Henkenberg are the top locations and at the same time also the large plants designated by the VDP . Only these top locations managed by the winery are shown on the labels. The designation Großer Gewächs, as an individual layer designation, should allow a comparison with the layer classification similar to Alsace or Burgundy Grand Crus .

The special feature of the Oberrotweiler vineyards in Kirchberg is the volcanic weathered rock tephrite in the subsoil, which has a uniform-grain, fine-crystalline to porphyry structure. The parcels at Eichberg stand on a cone of black volcanic ash and dark, porous tuff . The Henkenberg consists of cold, weathered lava soil, which is criss-crossed with limestone inclusions. This melange is overlaid by dark volcanic ash. Loess can be found on the Käsleberg. Particularly with the Burgundy grape varieties, with appropriate management, an unmistakable aroma and style of the wine, characterized by the character of the soil, is possible. With each new vintage Salwey tries to work out the peculiarities of the soil structure in interaction with the other defining quality factors more finely and more precisely in order to produce distinctive, independent wines.

Vinification

Wines from the oldest vines are produced under the designation "RS" (selection wines / local wines), which are matured in barriques as well as in traditional barrels or half-piece barrels made of oak. The winery produces dry wines without exception. Their character is determined solely by the variety and minerality of the volcanic terroir , to which spontaneous fermentation also contributes. The wines are largely matured in wooden barrels made from local oak and mature in their own mountain cellar, which is accessible at ground level from the tasting room. The wines are not bottled before May of the wine year .
