Wine cuts

Winzerschnitte ("Winzerweckle") are a simple dish from the Markgräflerland . Equal parts of sour cream , ham and grated cheese are mixed with a little cream . This mass is spread on a farmer's bread soaked with white wine and the whole is baked.

These simple cuts used to be taken by winemakers as a small snack in the vineyards, especially during the grape harvest . Winemaker cuts are partly to be found in other wine regions and belong to the "traditional winemakers kitchen".
