Adelungk first attended the Jacobi Church School, but was unable to start studying because his parents were poor. As an autodidact , he opened his own school in the Jacobi parish in 1670. The building on the Kattrepel burned down in 1673, but could be continued at the same location. From 1689 Adelungk worked at a school for the poor in the Katharinen parish and in 1698 took over the management of the Knakerüggischen school for the poor. It was a foundation school, which one of his eleven sons took over from 1710 on.

In 1695 Adelungk published the “Thesaurus Historiarum or Newly Opened Treasury of Rare and Exquisite Histories”. The work, which is now considered partially lost, has been published several times. In 1696 he created the "Kurtze Historical Description". It was the first chronicle of Hamburg to appear in print. Since disputes with the Danish king regarding the imperial freedom of the Hanseatic city were highlighted, the work was immediately banned. In addition to the scriptures, Adelungk created various series of calendars until his death .
