Zatar ( Arabic زعتر, DMG zaʿtar  ' thyme ', also Za'tar , Za'atar , Zahtar or Satar ) refers to a mixture of spices from North Africa , the Middle East and Turkey . It is part of the North African and Arabic cuisine .

Zatar is the Arabic name for the wild thyme , which is used as the main ingredient. The dried leaves of the Syrian hyssop ( Origanum syriacum , Syn .: Majorana syriaca ; also called Biblical hyssop .) And / or the heady thyme ( Thymbra capitata ), which have a taste of oregano, are used.

The basic recipe of the spice mixture has the named zatar, sumac , roasted sesame seeds and salt as ingredients . Depending on the preparation, other ingredients can be added, in the Aleppo thyme from Syria and Lebanon , for example, other spices such as coriander , anise and fennel as well as sunflower seeds and nuts are added.

Traditionally, zatar is mixed with olive oil and spread on a flatbread before baking . The mixture is also used for meat and as a dip for bread and other foods.
