Œil de Perdrix

Oeil de Perdrix ( French for " partridge eye") is a salmon-colored rosé from the viticulture in Switzerland , consisting of Pinot Noir grapes (French .: Pinot Noir wine is made). The term is legally protected in Switzerland.

Œil de Perdrix was originally pressed in the canton of Neuchâtel , today it is also produced in other cantons of western Switzerland. In the canton of Valais , the Œil de Perdrix is ​​a Valais AOC -certified rosé wine, which comes from the Pinot noir grape variety and which can only be blended with up to 10% Valais AOC gray or white burgundy . The designation "Œil de Perdrix du Valais" has been used explicitly since 1963 for a related rosé wine made from Pinot noir grapes from the canton of Valais.

When the Italian dessert wine Vin Santo at least 50% of the grape variety Sangiovese is pressed, it receives the additional designation "Occhio di Pernice" - which means also "partridge eye".
