Isopropylmethoxypyrazine (IPMP), also 2-isopropyl-3-methoxypyrazine, is a chemical compound from the group of derivatives of pyrazine (more precisely the methoxypyrazine ) that occurs naturally as a fragrance . For example, it gives the potato its earthy smell.
The Asian ladybird , which was introduced to Europe for pest control, also produces this substance. It can give wine an undesirable, bitter taste ( wine defects ).
