Agaricic acid is a tricarboxylic acid that occurs naturally in mushrooms . The substance itself is not a flavoring substance , but is a toxic component of flavorings obtained from mushrooms. The maximum amount of the substance in food is subject to the Flavor Ordinance . Food containing mushrooms may contain a maximum of 100 mg · kg −1 . Other foods may contain up to 20 mg · kg −1 . The use of agaricic acid as an antihidrotic (antiperspirant) is no longer common today.
