Apples in a dressing gown

Apple in a dressing gown ( Pomme en robe de chambre or Pomme en chemise ) is a traditional dessert, related to the baked apple , made from stuffed apples baked in batter .

For preparation, sour apples (such as Boskoop or Braeburn ) are peeled and the core cut out. The apples, raw or pre-cooked in sugar water, are mixed with a mixture of z. B. sugar, butter and currants or chopped nuts and jam filled, to taste supplemented with white wine , rum or similar. If necessary, sprinkled with cinnamon and sugar, they are placed on squares made of rolled out puff pastry or shortcrust pastry , the dough corners are over the apples beaten up and the dough is smeared with egg yolk . Another method is to wrap long strips of dough in a spiral around the apples. After all, everything is baked in the oven. If the pastry is sprinkled with powdered sugar shortly before the end of the cooking time , a thin glaze of slightly caramelized sugar forms.

Apples in a dressing gown are served warm or cold, with vanilla sauce or something similar.

Other fruits such as peaches or apricots can also be prepared in the same way .
