'Assyrtiko' ( Greek Ασσύρτικο or Asyrtiko Ασύρτικο ) is a white wine variety from Greece .
They are found mainly in the Aegean islands, especially in the appellation Plagies Melitona on the peninsula Halkidiki and Santorini . This Greek grape variety is used to make high-quality, long-lasting wines with a strong acidity that go particularly well with seafood and fish .
This grape variety is used as a blend as a partner of Savatiano .
The climatic influences and the height of the vineyards have a pronounced effect on this variety, which has a very high maturation potential. The white wines are of good quality and retain a fresh acidity. When fully ripe, the wines can have an alcohol content of up to 17 percent by volume. Such wines are known in Santorini under the name nycteri or nykteri . Nykteri (Νυκτέρι) is a white wine that is mainly made from Assyrtiko with the addition of small parts of Aidani Aspro and Athiri . It is an acidic and full-bodied, mostly pale yellow wine that often has a light jasmine bouquet , but always has lemon or lime aromas. It gets its name from the harvesting and pressing method, which takes place within a day and does not end until the early hours of the morning. Nykteri means something like "night work".
With a planted vineyard area of 1,106 hectares (as of 1999), it is one of the most important varieties in Greece. In Santorini alone, their share is 70%. In addition to the main variety, 2 clones are known on this island. While the clone Arseniko only turned out to be virus-infected vine material from Assyrtico, genetic analyzes showed that Flaskassyrtiko is an independent grape variety.
