The B52 (also B-52 or "Bifi") is a cocktail ( short ) whose components in the glass result in three - also optically - clearly delimited layers.

According to legend, the B52 was created in the famous Alice's Restaurant in Malibu (California) . The name refers to the US long-range bomber Boeing B-52 . This bomber was used, among other things, to drop incendiary bombs during the Vietnam War . Rumor has it that the flambéed version of the cocktail that is popular today was based on this.

The cocktail is prepared in a small, heat-resistant glass. First coffee liqueur ( Tia Maria or Kahlúa ) is poured in, then cream liqueur (e.g. Baileys ) is carefully poured over a bar spoon , the two liqueurs should mix as little as possible. Finally, Grand Marnier is added just as carefully . Is often different from the original recipe, instead of Grand Marnier dark over-Proof - rum used. There are special machines that can prepare a B52 (or other multi-layered cocktails) in a few seconds, but the B52 is usually prepared manually. Cocktails with horizontal layers are also called " Pousse Café ", the type of preparation is called - compared to shaking and stirring  - "Building", the B52 is thus built .

The B52 is drunk from below with a drinking straw , with the Grand Marnier being lit by the bartender shortly beforehand. Since the drinking straw is not heat-resistant, the cocktail must be drunk as quickly as possible. Alternatively, fireproof drinking straws can be used, or the flame can be blown out shortly before drinking. Normal glasses can be used if only a small area of ​​the glass is exposed to fire, so the liquid is filled up to the brim.
