Baba Ghanoush ( Arabic بابا غنوج, DMG Bābā ġannūǧ ) is a puree of Arabic cuisine from eggplant and sesame paste ( tahini ), which as a dip or supplement such. B. is served with shawarma and falafel .

For preparation, grilled and skinned eggplants are pureed, mixed with sesame paste and seasoned with garlic , salt , pepper , cumin and lemon juice . Before serving, a dash of olive oil is added, often also parsley or coriander .

A similar or identical dish is mutabbal .
