Brandy vinegar , in Austria spirit vinegar , is a vinegar made from brandy or pure agricultural alcohol, i.e. H. Ethyl alcohol of agricultural origin . During fermentation , acetic acid bacteria convert the alcohol contained in the brandy aerobically (i.e. with the supply of oxygen ) into acetic acid . In Germany, brandy vinegar is the most widely produced vinegar.

Since the alcohol content is comparatively high before fermentation, it is diluted to about 13 to 14% and nutrient media are added to support the fermentation. Brandy vinegar is tasteless due to its substrate , but has a much more intense acidity than z. B. Wine vinegar and must be dosed more carefully. The acid content is usually 5 to 10%, but more rarely 12 to 14%. The residual alcohol content can still be 0.5% vol. be.

The term table vinegar is also common to distinguish it from wine vinegar or a mixture of brandy vinegar with 25% wine vinegar. Brandy vinegar with an acid content of 10% is often referred to as spirit vinegar .

Because it is inexpensive to manufacture, brandy vinegar is mainly used in the food industry for the production of cold-stirred sauces , mayonnaise , mustard , ketchup and marinades for spread salads, where a lighter vinegar would add too much liquid and its own taste. The food manufacturers need brandy vinegar for pickling or as a condiment for fine acids such as cucumbers, mustard, pumpkins etc. In the retail trade, a vinegar is often offered that consists of 1/3 wine vinegar and 2/3 brandy vinegar. One also speaks of "spicy wine vinegar" or "wine-brandy-vinegar".

A special kind of brandy vinegar is the so-called potato vinegar. In the 19th century, potato vinegar was made from potatoes. In Russia , where vodka is often distilled, this "vodka vinegar" is made directly from diluted vodka. This vinegar is then used for pickling cucumbers, capers, beetroot, etc.

The stone pine vinegar, which is produced in Austrian Styria , is regarded as a noble brandy vinegar . It is made in the traditional process from pine schnapps diluted with fruit juice , which in turn is obtained from pine cones .

Brandies such as grain, whiskey or rum can also be used to produce brandy vinegar. This, in turn, can be used for "make-up vinegar" by adding herbs, spices or vegetables to give it a certain flavor.

For the production of an aromatic vinaigrette , pure brandy vinegar is rather unsuitable.

Tax status

Although brandy vinegar is made from alcohol, it is not subject to the brandy tax as a consumption tax in Germany , as it has no relevant residual alcohol content. According to a survey by the Federal Statistical Office , 215,349 hl were delivered for tax-free use in 2009 for the production of vinegar (Section 132 (1) No. 2 BranntwMonG) .
