The special brewery is a traditional brewery in Bamberg . Smoked beer is brewed here in a traditional craftsmanship . The annual output is around 6,000 hectoliters.

Types of beer

Five different types of beer are brewed: In addition to the lager , a Märzen beer , a wheat beer and, since 2006, an unpounded beer are also brewed. A strong beer with an original wort of almost 17% is also served between the end of October and the New Year . With the exception of the unpounded beer, all types of beer are made with smoked malt (from Upper Franconian brewing barley from controlled organic cultivation ), which gives the beer its characteristic smoky taste.

Brewery history

The founder of the brewery is Linhard Großkopf, who started brewing beer as early as 1536. He came from a well-known Bamberg brewing family and was a trained butcher . The close relationship between the Büttner and brewing trades comes to light again and again in the later successes of ownership. The name of the brewery appears for the first time in connection with the later owner Niklas Delscher, who is called “Spicial, eyn Bräuer and also Büttner gewesten”. The brewery property has been owned by the Merz family since October 1898.

Rock cellar

To cool the freshly brewed beer, master brewer Georg Ott acquired a cellar on the Upper Stephansberg in 1830 . An ice gallows located on the property enabled the production of ice in winter, which was then transported into the tunnels for additional cooling. This gallows was used until the 1960s. As is common with other breweries, the garden above the cellar was used as a beer garden in summer . Even if the Felsenkeller is no longer used today due to the development of cooling machines, the Spezi-Keller is still a popular summer restaurant today.
