Bregenwurst or Brägenwurst (also cabbage sausage ) is a raw or lightly smoked sausage made from lean pork , pork belly, onions , salt and pepper . It is a specialty in Lower Saxony and Saxony-Anhalt and is usually served with kale , which is known regionally and particularly in Braunschweig as brown cabbage . The Bregenwurst states is usually instead of mainly in North West Germany in kale dishes usual Pinkel sausage ( kale and Pinkel or lignite and Pinkel used) and allowed to cook like this for a while together with the carbon.

The Bregenwurst got its name from the previously admitted pig brain : Low German stands for Bregen or Brägen for brain ; today the brain may no longer be processed.
