Calcium malate is the calcium salt of malic acid (E 296) and a food additive .
Extraction and presentation
Calcium malate can be obtained by reacting malic acid with calcium carbonate .
use
Calcium malate is used in the food industry as an additive or acidity regulator E 352 (e.g. in potato chips). This makes use of the fact that malic acid is released in a controlled manner, depending on the environment, so that the acidity of the food remains relatively constant. As a natural cell component, malic acid and its salts (malates) are considered harmless. The amount ingested with food is incorporated into the metabolism. In chemistry it is used as a buffer reagent.
