Caledonian was a whiskey distillery in the Haymarket district , Edinburgh , Scotland . The distillery was popularly called The Cally . The distillery buildings are classified in category B in the Scottish monument lists. Other former whiskey distilleries in Edinburgh are Abbeyhill , Canonmills and Lochrin .
history
The distillery was founded in 1855 by Graham Menzies in the Edinburgh district of Haymarket as the Edinburgh Distillery and was used to produce grain whiskey . In 1884 it merged with the Distiller Company Ltd (DCL) and was operated by Scottish Grain Distillers Ltd from 1966 . The closure took place in 1988. In 1997 the production facilities were partially demolished.
The acquisition of the distillery by DCL led to its preponderance in the grain market and thus in the blends segment . As a result, to provide a stronger counterbalance, a group of blenders founded the North British distillery .
production
The distillery received the water it needed for whiskey production from the nearby Union Canal . She used a 1000 gallon coffey still , which was the largest coffey still in the world. At times, Caledonian was the largest British grain distillery.
Bottlings
Over the years, Caledonian has not brought an original bottling onto the market, but there are some bottlings from independent bottlers.
